SUMMARY:
The dishwasher position is responsible for maintaining cleanliness and sanitation standards for china, glassware, tableware, cooking utensils, etc., using machine and manual cleaning methods. This position also ensures the dishwashing area is maintained as a clean, safe and sanitary facility and maintains kitchen work areas and restaurant equipment and utensils in clean and orderly condition.
ESSENTIAL DUTIES:
- Collects all soiled items in a large stainless steel sink for soaking, adds the proper amount of cleansing agent in order to soften hardened residue.
- Scrapes and washes all stock kettles and pots with steel wool or a wire brush in order to clean for reuse.
- Stacks and dries all pots, pans, etc. and arranges in order to make them accessible for the cooks.
- Prepares tableware for washing (i.e., drains closed, tanks filled, temperatures at correct level, detergents at proper level).
- Scrapes food from dirty dishes and washes them by hand or places them in racks or on conveyor to dishwashing machine.
- Sweeps and mops kitchen floors.
- Thoroughly cleans dishwashing equipment and working areas including worktables, walls, refrigerators, and meat blocks continuously throughout shift.
- Segregates and removes trash and garbage and places it in designated containers.
- Steam cleans or hoses out garbage cans.
- Sorts bottles, and breaks disposable ones in bottle crushing machine.
- Transfers supplies and equipment between storage and work areas.
- Other duties may be assigned.
QUALIFICATIONS:
- At least three months of related experience is preferred.
- Must have basic math and reading skills.
- Ability to apply common sense and practice good judgement.
- Ability to walk and stand for extended periods.
- Ability to climb and balance, stoop, kneel, crouch and crawl.
- Ability to use hands and arms to reach and feel.
- Ability to lift and or move up to 50 pounds.
